When I make this Parmesan and lemon chicken recipe it’s always a big hit with my husband and especially my daughter who absolutely loves it. It’s a delicious and simple recipe to make and you can get the kids involved with the crumbing of the strips.
Kids love chicken strips so it’s always a good family meal option. However, good quality white meat chicken strips at the supermarket can be quite expensive. That’s why I like to make my own because it’s a lot cheaper, you know it’s 100% chicken meat and you can add ingredients you like to the crumb.
In this recipe I used chicken tenderloins because they are really tender, they retain their moisture during cooking and you can buy them already prepared which saves you time. If you prefer, you can use whole chicken breasts, you will just need to cut them yourself into strips. I’ve given you the two options in the recipe.

INGREDIENTS
450g chicken tenderloins or 3 x 150g chicken breasts
2 eggs
1/2 cup flour
1 1/2 cups bread crumbs
1 tablespoons lemon zest
1/3 cup grated parmesan
15 ml (1 tablespoon) olive oil for drizzling
30 ml (2 tablespoons) fresh parsley (optional)
Zesty Aioli
• 1/2 cup mayonnaise
• 1 teaspoon finely grated lemon zest
• 1 clove garlic, minced
• 1 tablespoon fresh lemon juice
• Ground pepper (optional)
METHOD
Step 1: Preheat oven at 205°C (400°F). Lay a piece of baking paper onto a baking tray and brush it with some olive oil.
Step 2: If you bought chicken breast instead of tenderloins, you need to cut the breasts into 1cm (1/2 in) thick strips.
Step 3: Prepare three bowls. Add the flour into the first bowl and season with salt and pepper. Beat the eggs in the second bowl. In the third bowl mix the breadcrumbs, lemon zest, Parmesan and parsley.
Step 4: Coat each chicken strip with flour and shake off any excess. Dip each strip into the egg mixture and then into the breadcrumbs.
Step 5: Place chicken strips on the baking tray and drizzle with olive oil. Bake for 15 minutes or until golden and crispy.
Step 6: While the chicken is cooking, prepare the lemon aioli by mixing the mayonnaise, lemon zest, lemon juice , minced garlic and ground pepper in a small bowl. Serve chicken strips with aioli and a rocket/arugula salad.
